Tonight's Dinner

Provencal Style Edamame Saute:
Much yummier than I expected - would eat this again. I had to look up how to core and slice the fennel since I had never actually cooked with it before (or for that matter, eaten it). Other than that the prep/cooking was actually really easy.

That sounds pretty good. I usually just roast my fennel, but maybe I should try something new. I also never know what to do with leftover feta cheese (sometimes we do falafel night and then we have leftover feta). Last time I used it in mac and cheese, but this sounds much healthier!

Falafel... I have been wanting to try making it, maybe I need you recipe. Does JT eat it? With Ketchup maybe?

I have never prepared fennel, but I see it here in the store and think about trying it. We ate it raw like carrot sticks in Italy when we visited in Chip's host family's home.
